@Envy hmmmm those sound good. could you send me how to make them. i want to start getting into baking. got lots of time since i don't work and just stay at home taking care of my nephew and cleaning the apartment
I'll post the recipe up here, it's pretty easy, though not sure what measurements you use.
Lemon Butter Biscuits
Makes 30-36
115g caster sugar
115g plain flour, sifted
Grated zest of two lemons,
Half teaspoon of vanilla essence (I just use a capful)
115g unsalted butter, cut into 2cm dice (or just smaller parts)
1 tablespoon of lemon juice
3 egg whites
Pinch of salt
And a greased tray/tray lined with greaseproof paper. Differs for each person. Personally we're lazy and we spread low fat oil thinly on a tray.
This recipe's pretty lazy too - You'll need a food processor. :woohoo:
1. Mix sugar and lemon zest in food processor until pretty evenly mixed.
2. Add the butter and mix in food processor until creamy.
3. Add the egg whites and keep mixing.
4. Add the flour a spoon at a time and keep mixing.
5. Add lemon juice, pinch of salt and vanilla essence, mix it some more.
6. Transfer into a bowl, mix it with a wooden spoon (we just use a knife because it's easier to get the batter off, don't know if that makes a difference)
7. Cover with cling film and leave it for 20 minutes.
8. Preheat oven to 190c or gas mark 5.
9. Place heaped teaspoonfuls of batter onto the trays, leaving a pretty big gap between them.
10. Bake in oven for about 10 minutes until the edges start to brown, when they're done, stick them on a wire rack to cool.
From following that recipe, I'd say - If you can't spread them really thinly on a tray, cook them in several batches, because they taste better when they're thin and crispy (we didn't spread ours thinly enough and they all merged together, haha). They're meant to turn out the consistency of brandy snaps (and you can roll them into the same shape too). Couldn't find a good picture, but did find one of someone making brandy snaps.
Gives you a good idea of how thin they should be and how much they spread. :S
